We started our last full week of summer off a little sweet with some Mini Blueberry* Pancake Bites. These bite-sized bits of breakfast heaven are not only quick and easy - perfect for busy school mornings - but are packed with brain-boosting goods like blueberries and collagen for just the fuel those little heads need. Ingredients:
1 cup Kodiak Cakes Power Pancake Mix
1 cup unsweetened vanilla almond milk
2 scoops Vital Proteins Collagen Peptides
1 Tbsp maple syrup
splash of vanilla extract
fresh blueberries*
Directions:
Preheat oven to 350F. Grease mini muffin tin.
Mix all ingredients except blueberries in large bowl until well incorporated.
Fill muffin tin wells 3/4 full with batter. Press 2-3 blueberries into each filled well.
Bake 8-12 minutes or until pancakes are browning on sides and cooked all the way through.
*Other options include mini chocolate chips, cinnamon and pecans or more brain fuel with some chopped walnuts.
