Apple & Banana "Cookies"

I have to give a big shoutout here to one of best my gals - Libby - for unintentionally inspiring this snack that has become a staple in our home. My girls (particularly my oldest, Virginia) would eat “apple cookies” for every meal if I would let her. The great part about these little guys is that there a so many ways to customize them for your tiny people (or yourself - one of my favorite post-workout snacks). I’ll share the bare basics of how we eat them first then throw some ideas for variations at ya afterward. I’ll be willing to bet that once you try them, they’ll become a fixture in your home as well.

Apple Cookies - slice apples into thin rounds and cut out core. Spread slices with peanut butter and then top with raisins and mini chocolate chips.

Banana Cookies - slice bananas then place small dollop of peanut butter in the middle. Top with a dark chocolate chip or raisin.

Some of our favorite variations include:

Apples + Peanut Butter + Sprinkles (we call these Unicorn Cookies)

Apples + Peanut Butter + Granola + Honey

Apples + Almond Butter + Granola + Cinnamon

Apples + Almond Butter + Freeze-dried Strawberries

Banana + Peanut Butter + Granola + Honey

Banana + Almond Butter + Chocolate Chips
