Listen, I don’t want bananas in my cookies. If you’re good with banana flavored cookies then more power to ya, but if it says it’s a cookie, I want it to taste like a cookie. Finding a “healthy” version of a chocolate chip cookie that doesn’t taste like a banana on the internet is really freaking hard. I found a couple that I wasn’t wild about the texture or flavor or blah blah but then I decided to take a regular cookie recipe I love and just switch around some of the ingredients.
It worked. My kids loved them, Mason loved them, and I was happy because it tastes like a cookie and not a banana. Then I made them miniature so that I can give my kids two and trick them into thinking they won the cookie jackpot…they love me most.
Ingredients:
1/2 cup unsalted butter, softened (I like Kerrygold for this)
1 cup coconut sugar
1 large egg, at room temp
2 tsp vanilla
1 Tbsp molasses
1 2/3 cup GF rolled oats
1/2 cup almond flour
1/2 cup GF baking flour
1/2 tsp salt
1 cup Enjoy Life Foods chocolate chunks or dark chocolate morsels (you choose…both are great)
Directions:
In medium-sized bowl, add oats, flours, and salt and mix well. Set aside.
Cream together softened butter and coconut sugar until smooth - 3-4 minutes. (I use a stand mixer for this but you could also use a hand mixer.)
Add egg and mix on high for additional minute.
Add vanilla and molasses and mix until all ingredients are well incorporated. You may have to scrape down the bowl a couple of times.
Add dry ingredients to mixing bowl and mix until just combined.
Fold in chocolate and cover. Place in refrigerator for 30 minutes.
Preheat oven to 325F and line 2 baking sheets with parchment paper.
Remove dough from refrigerator and use tablespoon to scoop and make small dough balls. Place on baking sheet.
Bake in over for about 7 minutes or until bottoms start to brown. You may have to watch the first batch pretty closely since baking times will vary based on how large or small your cookies are.
Let cool for 5 minutes on baking sheet then transfer to wire rack to cool completely. Or just eat them straight off the baking sheet like we do…
