Sometimes you just need an easy win. This vegetable side dish is just that - simple, few ingredients and everyone at your table will gobble it right up.
Ingredients:
4-5 medium carrots, sliced into round disks
8 oz Baby Bella Mushrooms, sliced
2-3 Tbsp butter
2 Tbsp Coconut Aminos (could sub low sodium soy sauce)
2 cloves garlic, minced
Salt
Pepper
Directions:
In cast iron or nonstick pan, heat 2 Tbsp butter over medium heat. Once melted and bubbly, add in garlic and sauté for 1-2 minutes until fragrant. Add in mushrooms and carrots, season with salt and pepper, then mix well and sauté for 10-15 minutes, stirring frequently. Once carrots are soft (not mushy - I like them to still have some texture), add in coconut aminos and extra tablespoon of butter (optional) and stir. Lower heat and let simmer for about 5 minutes or until sauce has thickened and coated the veggies. Enjoy warm with whatever main dish you’re serving.
